We’ve reached the heart of summer and this scorching heat really hasn’t done great for our diets- well at least not mine! The crave for fro-yo after fro-yo needs to end. If you are looking for a new and healthy dish that is perfect for the summer time, I have just the answer. ( And if you happen to have a garden, you’re in luck!) Garden tomatoes, peaches, and basil are a hit recipe for a number of summer dishes. In the summer time, there really is nothing healthier, lighter, or more refreshing than some natural herbs and fruits.
A favorite dish for these ingredients is the tomato salad with peach and basil vinaigrette. Just think of a ripe, juicy tomato slice drizzled with a light and tasteful vinaigrette filled with slivers of peaches and basil. It’s light, it’s easy, and it’s delicious!
There is an assortment of additional dishes this concoction of tomatoes, peaches, and basil can create. Honey roasted peaches with thyme; grilled peach prosciutto pizza; peach cilantro vinaigrette with spinach salad and a touch of tomatoes; peachy pecan chicken salad; peachy grilled chicken with peach mango salsa; peach and basil salsa; peach and pesto grilled cheese with tomato; pork chops with a peach and sage glaze; peach and Mint Crumble; and jalapeno peach rice with salsa; tomato-basil jam; or even a basil peach raspberry sangria!
